Quinoa and Rawa Vegetable Uppuma
Ingredients
- Quinoa – 1/2 cup
- Coarse Semolina (rawa) – 1/2 cup
- Cherry tomatoes – 6
- Frozen or fresh peas – 1/4 cup
- Fresh lemon juice – 1 tbsp
- Black mustard seeds – 1/2 tsp
- Urad dal – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Dry chili – 1
- Green chilies – 2
- Fresh ginger minced – 1 tsp
- Rasam or sambar powder – 1/2 tsp
- Canola Oil – 2 tbs
- Ghee – 1 tbs
Directions
- Heat 2 tbs oil and splutter mustard seeds, cumin and, urad dal, one dried chili.
- Add half a Cup quinoa and one cup of semolina and sauté over a medium flame till they just start to brown.
- Make space in the center and add 1 tbs ghee and 1/2 tsp turmeric some Rasam powder and two chopped green chilies, a tsp of minced fresh ginger, 1/4 tsp hing.
- Stir and add 6 cherry tomatoes, and 1/2 cup of frozen peas or snow peas.
- Add three cups of hot water and stir and cover.
- Simmer on low flame for 5 min.
- Squeeze a fresh lime and garnish with chopped cilantro and curry leaves.
