Quinoa and Rawa Vegetable Uppuma

Ingredients

  • Quinoa – 1/2 cup
  • Coarse Semolina (rawa) – 1/2 cup
  • Cherry tomatoes – 6
  • Frozen or fresh peas – 1/4 cup
  • Fresh lemon juice – 1 tbsp
  • Black mustard seeds – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Dry chili – 1
  • Green chilies – 2
  • Fresh ginger minced – 1 tsp
  • Rasam or sambar powder – 1/2 tsp
  • Canola Oil – 2 tbs
  • Ghee – 1 tbs

Directions

  1. Heat 2 tbs oil and splutter mustard seeds, cumin and, urad dal, one dried chili.
  2. Add half a Cup quinoa and one cup of semolina and sauté over a medium flame till they just start to brown.
  3. Make space in the center and add 1 tbs ghee and 1/2 tsp turmeric some Rasam powder and two chopped green chilies, a tsp of minced fresh ginger, 1/4 tsp hing.
  4. Stir and add 6 cherry tomatoes, and 1/2 cup of frozen peas or snow peas.
  5. Add three cups of hot water and stir and cover.
  6. Simmer on low flame for 5 min.
  7. Squeeze a fresh lime and garnish with chopped cilantro and curry leaves.
