Grilled Vegetables and Spaghetti

Sauté mushrooms, sweet peppers and golden cherry tomatoes in olive oil with a bit of garlic and chili flakes. Add your choice of herbs and pepper and salt to taste.

When the tomatoes skins break serve over fresh spaghetti tossed in a bit of marinara or tomato basil sauce. Tastes best hot from the stove with al dente pasta tossed in only a small amount of sauce. Should be sizzling on the plate. Fresh vegetarian cheese always an option. Or a side of yogurt patchadi.

Grilled Vegetables and Spaghetti

My daughter and I love making this dish for dinner. She likes to help and loves to eat “long long noodle pasta”. I like the 15 min prep time, the healthy ingredients, one pot cooking, and clean up. A bit of fresh salad and the meal is complete.

Ingredients

  • Whole wheat or organic spaghetti – 1 lb
  • Chopped Onion – 1
  • Cherry tomatoes – 6 -12
  • Marinara sauce – 1/2 jar
  • Fresh Thyme – 1 sprig
  • Oregano – 1 pinch
  • Basil dried or fresh – 1 pinch
  • Olive oil – 4 tbs
  • Sweet peppers diced – 1/2 cup
  • Button Mushrooms – 1/2 cup
  • Fresh Garlic – 1 clove
  • Vegetarian Cheese grated or chopped – 1/4 cup
