This is a completely vegan recipe where the cream/cheese sauce is made with ground cashew nuts soaked in water ahead of time. It takes just a few minutes to prepare and impresses your friends, if you have any of them over and share. Many thanks to Chethana Venkataraghavan for sharing this recipe.

Ingredients

  • penne or macaroni pasta – 2 cups
  • raw cashew pieces
  • Nutritional Yeast
  • minced garlic – 1 clove
  • Salt – to taste
  • Vegan Butter – 2 tbsp
  • Black Olives – 12

Directions

Boil pasta and keep it ready. Soak some cashews, and blend it with some nutritional yeast, garlic, salt, and little water. Now, the next step involves praising yourself a lot and constantly licking small portions of the cream cheese without worrying about the fact that it is actually liquid cashews. Then take a pan, add a drop of vegan butter (I use Earth Balance, you don’t HAVE to but oh god please do) and throw in the sauce. Then add the cooked pasta and blend it with the white sauce.

Throw in a disproportionately large number of olives because that’s the sensible thing to do.
