A very healthy, tasty and easy to make dish can go as accompaniment to variety of food like dosai, idly, adai, chapathi, paratha & rice too. You may try it with Chips as a dip!

Mixed Vegetable Thogayal (Chutney)

Ingredients

  • Red Bell Pepper – 1
  • Onion (Big) – 1
  • Ripe Tomato (Small) – 2
  • Zucchini (Medium) – 1
  • Green Chili – 6-8
  • Anaheim – 1/2
  • Orange Peel – 3 inch
  • Lemon (Medium) – 1/2
  • Ginger – 1-2 inch
  • Coriander/Cilantro – 1 bunch
  • Curry leaves – 2 strands
  • Sesame – 3-5 Spoon
  • Tamarind Paste – 3-4 spoon (Per Taste)
  • Dosai podi – 3 spoons
  • Sea Salt – Per Taste

Directions

Heat the sesame oil on a pan and add the cut vegetables (Onion & Red bell pepper first, then other vegetables & leaves) and sauté until onions golden brown. Make sure the vegetables are cooked well. (Add little water). Add sea salt as per taste requirement. Add Tamarind paste once you ensure the vegetables are cooked well. Add dosai podi and bring to boil. Transfer to a blender and blend coarsely. Add lime juice at the end and mix well.
